Mango Lassi Overnight Oats

Overnight oats are a wonderful breakfast to prepare in advance for those busy mornings. You can make a big batch on a Sunday and they’ll keep for a good five days in the fridge. The flavour of sweet juicy mango combined with the creamy yoghurt and oat mixture is a treat for the tastebuds, while offering some impressive nutritional benefits.

 

Oats contain a type of soluble fibre called beta-glucan which is brilliant for gut health and may help reduce cholesterol levels and support heart health too. Mango contains a digestive enzyme called amylase, which helps break down carbohydrates, as well as polyphenols and fibre to nourish the gut microbiome.

  • 1 large mango
  • 2/3 cup plain yoghurt (can use dairy-free)
  • ½ cup rolled oats
  • ¼ cup milk of choice
  • 2 tbsp chia seeds
  • ½ tsp vanilla extract
  • ½ tsp ground turmeric
  • ½ tsp ground cinnamon
  • 2 tbsp flaked or sliced almonds, for topping
Mango lassi overnight oats
  1. Add the oats, chia seeds, turmeric, cinnamon, vanilla, milk and half of the yoghurt to a bowl and mix until combined. Cover and refrigerate overnight, or for at least 6 hours to thicken.
  2. When ready to serve, blend the flesh of half a mango with a third of a cup of yoghurt.
  3. Divide the  oat mixture between two glasses or jars and layer the mango mixture on top.
  4. Chop the other half of the mango into small cubes.
  5. Garnish with flaked almonds and chopped mango and enjoy!
